It may be that you simply want to get stuck in to some travelling, which is absolutely fine (and indeed that's all many people do). If this is the case there are all kinds of volunteer programmes to choose from all over the world when you plan a career break - either caring for the environment, endangered wildlife or impoverished communities.
Another option to consider when you plan a career break, aside from volunteering, is to learn a new skill while you are away. For example you could learn a new language or learn how to scuba dive. If you are looking for paid work overseas options when you plan a career break unfortunately most countries only grant working holiday visas to people under the age of 30. One exciting exception to this general rule, however, is China - where it's possible to get a fully paid position working as an English teaching assistant.
